Candied Bacon (Sandwich):


      A few weeks ago I had a delicious prusciutto sandwich at Gayle's Bakery (view my last trip here). The crunchy french baguette that encased italian deli meat was thinly coated with a layer of soft goat cheese, fig jam, and arugula lettuce coated in sweet balsamic vinegar. Needless to say, it was a perfect sandwich. But I found a way to make the sandwich even more heavenly! Enter my recipe for candied bacon! This sweet and savory treat is perfect on its very own, or along side a sunny side up egg (drizzled with maple syrup), and even in a tasty sandwich!


Magic Ingredients:
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 Tablespoon cinnamon
- 1 Tablespoon pumpkin pie spice (optional)
- generous grating of nutmeg (optional)
- 10 strips of bacon

Let's get started!
1: Preheat oven to 350 degrees.
2: In a shallow bowl mix together sugars, pumpkin pie spice, and nutmeg:


3: Dredge the bacon in the sugar and spice mixture on all sides and place on a cooling rack (I use this one and have no complaints!) that is set over a shallow cooking sheet:


4: Bake at 350 degrees for 15 minutes: 



5: After 15 minutes flip the bacon over with tongs and bake for an additional 15 minutes then serve!




      While the bacon was in the oven, I put together a sandwich perfect for highlighting the deliciously sweet flavor of the candied bacon. French baguette served as the bedding for goat cheese, fig jam, and spinach dressed with balsamic vinegar. I even had time to saute' some home grown yellow and green squash:
