Since it's Friday, I thought I would share a cocktail inspired by a favorite local bar called The Blue Lagoon. I think many of us here in Santa Cruz have at least one story about a night at "The Blue," as it is more fondly called. In order to avoid a potentially overly interesting night (and to save some cash!), I decided that mixing up a drink at home would be safer than venturing out. I adore this raspberry cocktail finished with sweet then tart lime sugar because it instantly transports me to lush beach lagoon filled with mermaids who would sip cocktails along with me!
Magic Ingredients:
-Blueberry vodka
-Mineral water
-Blue raspberry soda
-Sugar
-Lime
-Salt
*This recipe is very free form and I didn't include measurements so that each person could mix a beverage according to their own tastes!
Getting Started:
1: Zest the lime into a shallow dish of sugar and add a pinch of salt, you can also juice the remaining lime into your cocktail for a finishing touch if you would like.
2: Garnish your serving glasses with the salted lime sugar and get ready to start pouring : )
3: Mix the mineral water, raspberry soda, and blueberry vodka to your tastes and serve chilled!
I hope everyone out there has a lovely weekend and if you're feeling like you need a vacation, why not give this cocktail a try! I promise you will feel instantly transported to a tropic lagoon!
Yours,
Nico
