One of my favorite places to grab a glass of wine and relax during happy hour would have to be the Shadowbrook in Capitola, CA. All appetizers are half price, drinks are 4 bucks, the atmosphere is serene and calm, but best of all, there is baked brie! one of my favorite cheeses, wrapped in a flaky crust, and baked to utter perfection. They serve this dish with jalapeno jelly and toasted baguette and believe me when I say that it is to die for! I decided to recreate this appetizer at home and its just as good if not better, here's how:
-Wedge of brie cheese
-Premade pie crust
Let's get started!
1: On a cookie sheet covered in foil and cooking spray, wrap the wedge of cheese in the pie crust.
Make sure to cover all the edges really
well so it doesn't leak while baking!
2: Using a knife and the left over pie crust create decorations as shown below:
3: In a small bowl, beat the egg and brush the covered cheese with the egg wash:
4: Bake in the oven at 375 degrees until the crust is light golden brown and serve!
This recipe has become my new "go to" appetizer! Its so easy to make at home and looks incredibly impressive to whoever I am serving it too! Plus, the taste is one you won't soon forget!
