Pumpkin Spice Lasagna:


      I love a classic Italian lasagna but this time of year (when jack-o-lanterns are being carved up) it only seems appropriate to try a pumpkin lasagna! While this is more of a dessert than a main dish, this lasagna has a unique taste all its own. Layers of pasta, spiced cream cheese, and a sugary pumpkin sauce make this dish delicious in its own right. Top this pumpkin lasagna with a crisp crust of crumbled pastry cookies for a perfect garnish! 

Magic Ingredients:
-28 oz of pumpkin puree
-2 cups unfiltered apple juice
-8 oz fontina cheese (mozzarella works also)
-1/2 teaspoon salt
-4 tablespoons cinnamon
-4 tablespoons pumpkin pie spice
-16 oz cream cheese
-1 tablespoon ground nutmeg
-1 cup granulated sugar
-1/2 cup brown sugar 
-8 Torcetti cookies (Palmiers would work also)
- Lasagna noodles

Let's get started!
1: In a medium bowl, mix the pumpkin with 2 tablespoons of cinnamon, 2 tablespoons of pumpkin pie spice, salt, and 1/2 tablespoon of nutmeg. Once combined, mix in apple juice:




2: In a microwave safe bowl, combine cream cheese with remaining spices and microwave for 30 seconds. Stir, and place in microwave again and repeat this process until the cream cheese is softened:


3: Cube the cheese:

4: In a greased casserole dish, layer the pumpkin sauce, lasagna noodles (raw, they will cook in the oven), cream cheese, and cubed cheese until the pan is filled three quarters of the way full:


(You can't actually see these colorful noodles in the finished lasagna but I thought they would make photos for the blog more attractive!)







5: For your final layers, layer noodles with a generous amount of pumpkin sauce (making sure to cover all noodles completely), then cream cheese, cubed cheese, crumbled cookies and finally the brown sugar:




6: Bake in the oven at 375 degrees for 45 minutes. Pull from the oven and let stand for at least ten minutes to cool then serve!



      I know this recipe sounds a bit strange but trust me when I say it's yummy! And also pretty simple too make. There isn't too much actual cooking involved, just microwave the cream cheese, layer everything and pop it all into the oven!

  4. This looks delicious! I've never heard of pumpkin spice lasagna but I imagine it must taste really good! OK so how do I get comfortable in front of the camera. When I first started, I took pictures with a tripod indoors, and I set up a mirror behind the tripod so I could see what my pose looked like. Then my Mom started to take my pictures and we'd look at magazines for poses. And I'd practice them so they'd feel 'natural.' Try it and see, pick a few poses and practice. You'll be a pro in no time ;)
